Ingredients

Directions

  1. Heat 1 tbsp extra-virgin olive oil in a large skillet over medium-low heat.
  2. Add 1 yellow onion and cook, stirring occasionally, until soft and translucent, about 7 minutes.
  3. Add 3 tbsp tomato paste and stir until the onion is coated, about 1 minute.
  4. Keep cooking and stirring until the tomato paste turns a slightly darker red, about 2 minutes.
  5. Add the following:
    • 1 lb ground beef
    • 1 tsp chili powder
    • 1 tsp garlic powder
    • 1 tsp kosher salt
  6. Cook, breaking up the beef with a wooden spoon, until browned, about 7 minutes.
  7. Add 3 1/2 cups low-sodium beef bone broth, turn the heat to high, and bring to a boil.
  8. Add 8 oz high-protein elbow pasta and reduce the heat to medium-low.
  9. Cook, stirring occasionally, until most of the liquid is absorbed and the pasta is al dente, 10 to 12 minutes.
  10. Remove the pan from the heat.
  11. Stir in 8 oz shredded sharp cheddar and 1/2 cup plain whole-milk Greek yogurt until the cheese melts.
  12. Top with chives if using.
