Mediterranean Ground Chicken Wrap with Hot Honey Feta Cream

Ingredients

1 lb ground chicken
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
4 large whole wheat wraps
1 cup mixed greens
1 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/2 red onion, thinly sliced
1/2 cup feta cheese, crumbled
2 tablespoons hot honey

Directions

  1. Heat 2 tablespoons olive oil in a skillet over medium heat.
  2. Add 1 lb ground chicken, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika, and salt and pepper to the skillet.
  3. Cook until the chicken is browned and cooked through, about 7-10 minutes.
  4. While the chicken is cooking, wash and chop 1 cup mixed greens.
  5. Halve 1 cup cherry tomatoes.
  6. Slice 1/2 cucumber.
  7. Thinly slice 1/2 red onion.
  8. Once the chicken is cooked, remove it from the heat and let it cool slightly.
  9. Lay 1 large whole wheat wrap on a flat surface.
  10. Place a handful of mixed greens in the center of the wrap.
  11. Add a portion of the cooked ground chicken on top of the greens.
  12. Add cherry tomatoes, cucumber, red onion, and 1/2 cup crumbled feta cheese.
  13. Drizzle 2 tablespoons hot honey over the top.
  14. Fold in the sides of the wrap.
  15. Roll the wrap up tightly from the bottom to the top.
  16. Repeat with the remaining wraps and ingredients.
  17. Serve immediately or wrap in foil for a meal on the go.
