Parmesan Roasted Green Beans

Roast first, then add the cheese and broil — this keeps the Parmesan and mozzarella from burning
Watch closely under the broiler; the cheese goes from golden to burnt fast

1 lb fresh green beans, trimmed
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
2 cloves garlic, finely chopped
1/4 teaspoon freshly ground black pepper, plus more
1/2 cup shredded Parmesan
1/4 cup shredded mozzarella
Directions
Preheat oven to 425°F.
On a large sheet pan, toss
1 lb fresh green beans
with
2 tablespoons extra-virgin olive oil
and
1/2 teaspoon kosher salt
.
Bake, tossing after 7 minutes, until the beans are crisp-tender, 10 to 15 minutes.
Toss the green beans again, then sprinkle with
2 cloves garlic
and
1/4 teaspoon freshly ground black pepper
.
Top with
1/2 cup shredded Parmesan
and
1/4 cup shredded mozzarella
.
Heat the broiler. Broil the beans, watching closely, until the cheese is melted and golden brown, 2 to 3 minutes.
Season with more pepper and serve.
